Cut each aubergine in 1cm thick slices. Note: Do not cut until the bottom of each aubergine..
Using a spoon, marinade the aubergines with the olive oil and season with salt and pepper. Fill in between the slices with Violife grated with mozzarella flavour. Cover the aubergines with aluminium foil and bake in a preheated oven at 190ο C for 30-40 minutes, until they become soft.
