Directions

Cut each aubergine in 1cm thick slices.

Note: Do not cut until the bottom of each aubergine.

Using a spoon, marinade the aubergines with the olive oil and season with salt and pepper. Fill in between the slices with Violife just like Mozzarella Shreds. Cover the aubergines with aluminium foil and bake in a preheated oven at 370°F for 30-40 minutes, until they become soft.

200g Violife just like Mozzarella Shreds

2 large aubergines

Extra virgin olive oil (marinaded with 2 crushed garlic cloves and chopped fresh parsley)

Salt & freshly ground pepper
