Vegan Carbonara with Violife just like Parmesan

1) Cook the pasta according to package directions.

2) Grate 100g of Violife just like Parmesan. Keep the rest to make into flakes for serving.

3) Chop the beetroot into thin cubes and place in a baking tray. Season with rosemary, salt and olive oil.

4) In a frying pan, fry the onions, the mushrooms and add the milk. Stir and add in the lemon juice and salt and pepper. Add the grated Violife just like parmesan and stir.

5) When the pasta is ready, drain it and place it in the sauce, mixing to combine.

6) Serve with the beetroot cubes, chopped fresh parsley and Violife just like parmesan flakes.


100g Violife just like Parmesan, grated

50g Violife just like Parmesan, cut in flakes (for serving)

250g of whole meal spaghetti

1 shallot

100g mushrooms

125ml almond milk

2 tbsp lemon juice and zest

½ tsp sea salt

1/8 ground black pepper

1 tbsp olive oil

Rosemary sprigs

1 beetroot cut into thin cubes

Fresh parsley to taste
