Vegan Rainbow Club Sandwich with Violife slices just like Mature Cheddar and Violife slices just like Smoked Provolone

Directions

1) For the sauce make avocado into a paste with a fork. Add the lime and coriander and mix well. Set aside.

2) Chop all the vegetables, apart from the tomatoes, to your liking and add to a baking tray. Add oil, oregano leaves, salt and pepper and toss. Grill them for 15-20 minutes at 180o C.

3) Place the avocado spread on the base of one slice and top with the Violife just like Mature Cheddar slices. Add the tomatoes and the aubergine. Place another slice of bread on top and spread with mustard, zucchini and two slices of Violife just like Smoked Provolone. Then top with the peppers, closing the sandwich with the last slice of bread.

4) Garnish the sandwiches by piercing a pickle with a toothpick through.

Ingredients

FOR THE SANDWICH:

2 slices Violife just like Mature Cheddar

2 slices Violife just like Smoked Provolone

3 slices Sourdough gluten free bread

1 medium zucchini

1 small aubergine

1 orange pepper

2 small tomatoes, sliced

4 tbsp olive oil

Salt and pepper

Mustard

Oregano

FOR THE SAUCE:

1 avocado

Juice from 1 lime

Coriander

Pickles for serving
