Directions

Preheat oven to 360° F.

Mash avocado to create a paste-like consistency. Mix in lime and coriander to create sauce. Set aside.

Place all chopped vegetables onto baking sheet. Drizzle with oil and toss with oregano leaves, salt, and pepper. Place in oven for 15- 20 minutes.

Spread avocado sauce on bread. Top with Violife just like Mature Cheddar slices, tomatoes, and eggplant. Layer tomatoes and eggplant. Top with a slice of bread. Layer mustard, zucchini, two slices of Violife just like Smoked Provolone, and peppers. Finish with a slice of bread.

Place toothpick through pickle and sandwich for garnish.

Ingredients

FOR THE SANDWICH:

2 slices Violife just like Mature Cheddar

2 slices Violife just like Smoked Provolone

3 slices Sourdough gluten free bread

1 medium zucchini, chopped

1 small eggplant, chopped

1 orange bell pepper, chopped

2 small tomatoes, sliced

4 tbsp olive oil

Salt and pepper to taste

Mustard to taste

Oregano to taste

FOR THE SAUCE:

1 avocado

Juice from 1 lime

Coriander to taste

Pickles for serving
